I thought that they filled the bags with Nitrogen or inert gas or something to stop the Oxygen oxidising the greens and keeping them fresher for longer. In which case a flat bag would indicate that the gas had escaped and thus would be ones to keep away from. But then I could be wrong.
I believe in offering every assistance short of actual help but then mainly just want to be left to be myself in all my difference and uniqueness.

My understanding is about the same as Dennis. They fill the bags with an inert gas against wilting but also to give the bag some volume as a prevention against crushing.
Maybe we have to ask the Mythbusters to do some destructive testing on the subject.

MOH currently has her forest in our Polytunnel and a quick sortie in there will provide you with all manner of seriously fresh organic greens breathing real air with 20% oxygen in it. No bags.
